Because the majority of the land in the Middle East is desert. Desert is an arid soil, meaning the soil lacks moisture. Desertification is the process of making a land arid and sandy because due to the lack of moisture, the soil weathers and turns into desert. Most crops cannot survive with out water and while it is possible to farm in the desert with right the equipment and practices, it is not ideal because the cost of production is too high and it is not sustainable. The average rainfall in the middle east is around 250mm a year and it is unlikely to sustain crops with such rainfall.
