If there is too much room left in a roasting pan,  then most likely the flavors will dissipate since it is distributed all across the roasting pan, and the food can still be able to absorb it although there may be some portions, that left unabsorbed. Hence, the cook must choose a roasting pan, that is ideal to the size of the food that is being roasted. Hence, the recommended size for the pan is usually not too big and not too small, whereas there is at least ¼ free room left, even though the food is already in the pan. Although for some cases, it does not actually depends on the size of the roasting pan, but to the cook itself, if he/she is knowledgeable on what he/she is doing then there is nothing to worry about.
