Ghee freezes from bottom but water freezes from top because density of ice is less than of liquid . Water is most dense at 4°C . As water cools down from 4°C to 0°C it expands which make the ice lighter than the water and it floats on the water whereas ghee is  heavier when it cools down and sinks to the bottom.
